Just a quick post before heading into the weekend. Beans. Legumes. So nutritious yet so many of us rarely get enough in our diets. If beans are bland for you, then you need to try this simple, easy and quick-to-make recipe for a vibrant and delicious bean salad.
For 2-3 servings
You will need :
1 can (19 oz) of bean medley
(I used Unico brand: red kidney beans, chick peas, Romano beans and Great Northern white beans)
1 green onion
1 celery rib
1 medium carrot
3 broccoli florets
1 lime, juice and zest
Extra virgin olive oil
salt and pepper to taste
- drain and rinse the beans
- finely chop the green onion
- chop the celery and the broccoli
- spiralize the carrot
In a medium bowl, combine the beans with all the chopped veggies, except the carrot. Drizzle with olive oil, lime juice, add the salt and pepper. After tossing it, add the lime zest and the spiralized carrot and give it another toss.
That’s it! The carrots and celery add a nice crispiness to the dish. No boring salad here! Try it with some rice on the side or mixed right in.
Remember that legumes are low in fat, contain no cholesterol, and are high in folate, potassium, iron and magnesium, high in protein and a great source of soluble and insoluble fiber too.
Canned legumes of any kind are not my first choice. However, when time is a factor, they sure come in handy. Great for budget conscious families or students too!
