Preheat oven to 400° F
You will need:
1 medium cauliflower head
1/3 cup Mayonnaise
1/2 cup grated Parmesan cheese
1Tbsp Dijon mustard
1 tsp garlic powder
1/4 tsp lemon zest
1 Tbsp finely chopped chives
Remove any leaves from the base of the cauliflower. Place it in a microwaveable dish and steam it for about 10 minutes.
While it’s steaming, combine and mix all the other ingredients, except the lemon juice and chives, in a medium bowl. Set aside,
Remove the cauliflower from the microwave and let it cool for a few minutes.
Brush the mayo/cheese dressing all over it, getting into all the nooks and crannies until it is well coated.
Place it in a roasting pan, uncovered, and then in the oven it goes for 30 minutes. It will caramelize and bake to perfection, not too soft and not too crunchy.
Remove it from the pan and place it on a serving dish. Squeeze some lemon juice on it, grate a little (or a lot) more Parmesan cheese over it, sprinkle the chopped chives over top and serve!
It makes a beautiful side to serve with a fish or chicken dish. I promise you there won’t be too much left over, if any 😉
