#FoodFocus – The Real G.O.A.T-Oats: Peanut Butter and Cherry Oat Bites

Sometimes life has a tendency to get in the way. Things get put on the back burner and forgotten. This recipe has been on my list of things to share with you for quite a while now. It’s not anything new but a variation on the Peanut Butter Oat Bars and Bites recipe I posted in September.

For this treat, I added ground flax seed and some roughly chopped Montmorency tart cherries from Cherry Lane.

The procedure is the same:
In a medium saucepan, over low heat,

Melt 1/2 cup of liquid honey
and  1 cup of smooth or crunchy peanut butter

Stir in 3 cups of rolled quick oats
2 Tbsp ground flax seed
1/4 cup (or more) of tart cherries

Stir until everything is well incorporated.
Scoop out portions with a melon baller, finish shaping into balls and place on a cookie sheet. Chill in the fridge for about 30 minutes..

Peanut Butter and Cherry Oat Bites

Remember that oats are a good source of vitamins and minerals as well as soluble fiber. Flax seed is a super plant based protein source rich in omega-3 fatty acids, and the cherries are packed with antioxidants! These little balls make for a healthy on-the-go snack.
