For this recipe I used Extra Firm tofu.
1 egg, slightly beaten
Salt and Pepper to taste
Panko bread crumbs
For the Kale chips:
a few leaves of fresh kale
salt to taste
Slice the block of tofu into 1/4 to 1/2 inch slices and place them on paper towels to absorb the water and get them nice and dry. Season with salt and pepper. Then slice each piece into 4 so they resemble fries.
Have 3 bowls ready: 1 for each of the flour, egg and Panko crumbs.
Dredge the slices of tofu in the flour, followed by a dip in the egg and then into the Panko crumbs. Lay them on a baking sheet, lined with parchment paper.
Bake for about 15 minutes at 400 degrees or until desired golden colour is achieved!
For the chips:
Turn down the heat to 350 degrees.
Brush the kale leaves with a little olive oil, sprinkle with just a bit of salt.
Arrange on a baking sheet and bake for about 10 minutes.
They will be crispy and so delicious!
I sprinkled on some parmesan cheese and served them with sriracha mayo!
