Before you start, the cedar plank must be soaked so it doesn’t catch on fire while in the oven. Soak it in warm water for at least 1 hour, 2 is better. Planks are used on the grill/BBQ as well and these should be soaked for at least 2 hours, overnight is preferable in this case.
Preheat oven to 450 degrees F
You will need:
cookie sheet (optional)
light vegetable oil
parsley, fresh or dried
Once the plank has soaked for the appropriate length of time, dry it off with paper towel and brush one side with some of the oil. Place it on a cookie sheet and put it in the preheated oven for 15 minutes to warm up.
In the meantime, season the fish with the salt, and pepper. Place lemon slices on top. Sprinkle with parsley, as much or as little as you like.
Transfer the salmon fillet on to the hot plank and put it back in the oven for at least 10 minutes. The fish will be medium doneness. If this is under cooked for you, leave it in a few minutes longer but don’t overcook it or it will be dry. Let it rest on the plank for a few minutes before cutting (if the fillet was large) and plating it.
Serve it with a lemon wedge and enjoy!

- Top with basil and tomato instead of the lemon
- Use other citrus fruits like oranges or tangerines
- Brush it with maple syrup

The plank can be washed and air dried for a few more uses in the oven. If it was used on the grill, you might get one more use, depending on how charred the plank got during cooking.
