Crunchy, tangy and delicious!
You will need:
Red Cabbage – shredded
Green Cabbage – shredded
Kale – finely chopped
Granny Smith apple – thinly sliced
toasted sesame seeds (optional)
salt, to taste
Make as much or as little of this as you like. Put cabbage, kale and apple in a large bowl. Squeeze some lemon juice over the greens and toss gently. Pour a light oil over top. I used a really mild flavoured oil (Canola) so as not to overpower the tanginess of the apple. Add salt, toss and adjust the seasoning. Serve with sesame seeds sprinkled over top.
This salad keeps very well for a few days in the fridge. Remember the seasoning may have to be adjusted.
