#FoodFocus – Sweet Sweet Potato – Roasted Wedges

I love roasting in my oven. The aromas from something slow cooking is so welcoming. Roasted potatoes are delicious. Roasted SWEET potatoes are heavenly! And good for you!

Sweet Potato Wedges

All you need is:
1 sweet potato
olive oil  (extra virgin is the best)
seasoning of your choice
salt to taste

Here’s what you do:
Preheat oven to 450 degrees Farenheit

Wash the potato, cut it into wedges. Put wedges in a large enough bowl to toss them in. Drizzle enough olive oil to coat them and then season with salt and whatever seasoning you like.I used paprika for these.

Arrange them in a single layer on a cookie sheet and bake for 20 minutes, turning them at the 10 minute mark so they don’t char on one side.

Taste them for seasoning and adjust it if you need to.

From preparing them to roasting, you will have a super healthy snack or side of sweet potato wedges in just 30 minutes! Depending on the size of the potato, one will yield enough for two regular sized servings.
