My daughter will be spending the next 3 months out of province so yesterday, we had a few of her friends over for a special send off dinner. I woke up this morning feeling a little guilty about all the lasagna and the profiteroles and the Portuguese tarts we ate. Not to mention the appys and the Sangria we indulged in! So… it was time to focus on something a little healthier, cleaner and more nutrient rich today.
I keep seeing all these Instagram posts on Smoothie Bowls. Well, as it is part of my journey to learn new things, I decided to look into this new trend and see what all the rage is about. What I found out is that the smoothie bowl is nothing more than a smoothie, except it’s a little thicker, maybe with fewer ingredients blended in, served in a bowl and topped off with a selection of crispy toppings and pieces of fruit. And you don’t need a straw! Cool!
So, I decided to make one for myself. Not as portable as a smoothie in a jar but it’s always nice to sit at the table and enjoy a healthy breakfast! This recipe yielded 2 fairly large bowls, enough to share!
1 ripe avocado
2 fresh peaches, unpeeled
2 cups baby spinach
2 tsp ground flax
1/2 cup plain balkan-style yogurt
1 cup of milk
Blend all these ingredients and pour them into a bowl.
For the toppings I used:
ground flax seed
drizzle of honey
There it is! I don’t know why I was surprised at how filling this was.
I will definitely be trying different combinations of fruit and nuts, granola and maybe almond milk too!
