Dip into something brain healthy! Try this hummus recipe. I think you will like it!
1 can chickpeas, drained and rinsed (about 2 cups)
1 medium clove of garlic
1/4 cup olive oil
3-4 Tbsp lemon juice
2 Tbsp tahini or sesame paste
1/2 tsp black pepper
salt to taste
Put all ingredients, except the olive oil, into a food processor or blender. Blend well. Scrape the sides to make sure everything is incorporated properly. You may need to add a little water if it’s too dense. Then slowly add the olive oil and blend until creamy. Taste for seasoning and adjust if necessary. Serve in a bowl with a little olive oil drizzled and paprika sprinkled on top. Enjoy with pita chips, carrots or celery sticks or spread on whole grain crackers for a nutritious snack!
I have made this without the tahini. It’s good but it’s not the same. For a really creamy dip, peel the skin off each pea! This is not necessary but I like to play with food so I thought I would see how much of a difference it would make. A lot! If you have the time, please try it this way. Let me know what you think!
