Salads have become very popular meals, with or without added protein such as grilled chicken breast served on top or on the side. This salad has spinach as its bed and a wonderfully tangy lemon dressing. It’s quick and simple to make and won’t break your budget. It is super healthy as all the ingredients in it are brain healthy foods. The protein I chose was a boiled egg but tuna, salmon or chicken work really well with all the flavours. Give it a try!
2 cups of fresh baby spinach, rinsed well
1 Granny Smith apple, cubed
strawberries, sliced, as many as you like
feta cheese, cubed
1 boiled egg
2 Tbsp freshly squeezed lemon juice
2 Tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper
In a small bowl, whisk all the dressing ingredients together. In another bowl, mix spinach, apple, strawberries and feta cheese and pour the dressing over top. Toss gently. Peel and cut the egg in half and place on top.
If you have balsamic vinegar, you can substitute it for the lemon juice but it’s a more costly option. I know you will enjoy the flavour profile of this salad. The tanginess of the Granny Smith apple goes so well with the saltiness of the feta cheese! Enjoy!
